Nu het bijna Kerstvakantie is, leek het mij wel een fijn idee om nog eens een recept te posten. Eentje dat extra fijn is tijdens de winter: wortelcake :) Het klinkt misschien gek, maar iedereen die het heeft geproefd weet dat het heerlijk smaakt. Je proeft de wortel niet erg terug, maar het maakt de cake wel lekker smeuïg. Verder zorgen de kruiden ervoor dat het een heerlijke winterse cake is, en de topping maakt het helemaal af. Ik vind het in elk geval heerlijk. Veel plezier! :)

Now that Christmas is almost here, it seemed like a nice idea to post another recipe. One that’s extra nice when it’s winter: carrot cake :) It may sound a little strange, but anyone who has tasted it knows that it actually is delicious. It doesn’t really taste like carrots, but the carrots give the cake a nice and smooth texture. The spices make it perfect for winter, and the topping makes it even more delicious. Have fun! :)

Dit heb je nodig:

a) voor de cake

  • 280 g bruine suiker
  • 180 ml zonnebloemolie of frituurolie
  • 3 eieren
  • 200 g zelfrijzende bloem
  • 2 theelepels kaneel
  • een stukje verse gember
  • 1 theelepel gemalen kardemom
  • 300 g geraspte wortelen
  • 100 g gehakte of gemalen walnoten
  • een beetje boter om de bakvorm in te vetten
  • een bakvorm

b) voor het glazuur

  • 100 g roomkaas (bijv. Philadelphia)
  • 25 ml volle room
  • 50 g poedersuiker
  • een beetje citroensap

You’ll need:

a) for the cake

  • 280 g of brown sugar
  • 180 ml of sunflower oil
  • 3 eggs
  • 200 g of self-rising flour
  • 2 teaspoons of cinnamon
  • a piece of fresh ginger
  • 1 teaspoon of cardamom
  • 300 g of grated carrots
  • 100 g of chopped walnuts
  • a little bit of butter to grease the baking tin
  • a baking tin

b) for the frosting

  • 100 g of cream cheese
  • 25 ml of full cream
  • 50 g of powdered sugar
  • a little bit of lemon juice

Zo maak je het:

  1. Verwarm de oven voor op 180°C.
  2. Meng in een kom de suiker met de olie. Voeg dan één voor één de eieren toe. Roer met een klopper alles goed door tot het een egaal mengsel wordt.
  3. Rasp wat gember tot je ongeveer een theelepel hebt en voeg dat toe.

Directions:

  1. Preheat the oven on 180°C.
  2. Put the sugar and the oil in a bowl. One by one, add the eggs. Mix everything with a beater until it’s an even mixture.
  3. Grate a little bit of ginger, until you have about a teaspoon of it. Add it to the mixture.

Deel 2:

  1. Voeg een theelepel gemalen kardemom toe. Als je kardemompeulen hebt, kan je een vijzel gebruiken om die te breken. In de peulen zitten kleine zwarte zaadjes, en dit is wat je nodig hebt. Gebruik een mixer om de zaadjes fijn te malen. Voeg dit toe aan het mengsel.
  2. Voeg de kaneel toe.

Part 2:

  1. Add one teaspoon of cardamom powder. If you have cardamom pods, you can use a mortar to break the pods. Little black seeds will come out, and this is what you need. Use a blender to cut the seeds into little pieces. Add it to the mixture.
  2. Add the cinnamon.

Deel 3:

  1. Voeg nu de bloem toe, en roer tot er geen klonters meer in het beslag zitten.
  2. Rasp de wortelen en doe ze erbij.
  3. Hak de walnoten in kleine stukjes. Je kunt dit gewoon met een groot scherp mes doen, maar ik vond het gemakkelijker om dat met de mixer te doen (dit werkt een beetje op dezelfde manier als een blender). Doe ze erbij en roer dan alles nog eens goed door.

Part 3:

  1. Add the flour and mix it well.
  2. Grate some carrots until you have about 300 g. Add this to the mixture.
  3. Cut the walnuts in little pieces, add them to the the mixture and mix everything together.

Deel 4:

  1. Vet de bakvorm in en doe het beslag erin.
  2. Zet de bakvorm in de oven en laat de cake 45 à 60 minuten bakken.
  3. Ondertussen kan je het glazuur maken. Meng eerst de roomkaas met de room en voeg daarna de poedersuiker en het citroensap toe. Roer alles goed door elkaar met een klopper en zet het dan in de koelkast terwijl je wacht tot de cake klaar is.
  4. Kijk of de cake goed is. Het is de bedoeling dat hij niet meer nat is vanbinnen, maar hij mag best nog zacht zijn, want hij wordt nog harder wanneer hij afkoelt.
  5. Laat de cake een kwartiertje afkoelen. Haal hem dan uit de vorm en leg hem op een groot bord of op een schaal.
  6. Smeer dan het glazuur erop.
  7. Snij de cake in stukken en trakteer er je vrienden of familie mee. Smakelijk! :)

Part 4:

  1. Grease the baking tin and cover it with some flour. Now, put the mixture in the baking tin.
  2. Put it in the oven for 45 minutes to 60 minutes.
  3. Meanwhile, you can make the frosting. First, mix the cream cheese with the cream. Then, add the powdered sugar and the lemon juice. Mix it well with a beater, and then put it in the fridge while you the cake is still in the oven.
  4. Check the cake. It should be still a little soft inside, but not wet. When it cools down, it will become a little more firm.
  5. Let it cool of for fifteen minutes. Then, take it out of the baking tin and put it on a large plate.
  6. Put the frosting on the cake.
  7. Cut it in pieces and treat your friends or family. Enjoy! :)

Vandaag wil ik een van mijn favoriete Zweedse dingen met jullie delen: kanelbullar! :) Als je al eens in Zweden geweest bent, dan ken je ze vast al. Het zijn een soort broodjes met kaneel, en ze worden vaak bij de koffie gegeten. Ik vind dat ze heerlijk smaken, vooral op grauwe herfstdagen. Helaas kan je ze in België op niet veel plaatsen kopen (behalve dan in de Ikea), dus vandaag zal ik jullie vertellen hoe je ze zelf kan maken. Mijn inspiratie haalde ik uit dit recept. Today, I want to share one of my favourite Swedish things: kanelbullar! :) If you’ve ever been in Sweden, you probably know what I’m talking about. In English they’re called cinnamon buns. In Sweden, they have a tradition that is called ‘fika’ and it basically means: having a cup of coffee and a cinnamon bun in good company. Unfortunately, there are not a lot of places in Belgium where you can buy them (except maybe Ikea), so that’s why I’m going to tell you how you can make them yourself. I got my inspiration fromthis recipe. Have fun! :)

Dit heb je nodig:

  • 25 gram verse gist
  • 1,5 dl melk
  • 65 gram boter (of bakmargarine)
  • 45 gram suiker
  • 200 gram bloem (je kan ook de helft van de bloem door tarwemeel vervangen) (niet-zelfrijzend!)
  • een snufje zout
  • 1 theelepel kaneel
  • een handje vol parelsuiker
  • 1 ei

You will need:

  • 25 g fresh yeast
  • 1,5 dl milk
  • 65 g butter
  • 45 g sugar
  • 200 g flour (don’t use self-rising flour!)
  • a pinch of salt
  • 1 teaspoon cinnamon
  • a hand ful of pearl sugar
  • 1 egg

Zo maak je het:

  1. Verwarm de melk tot ze lauw is: dit kan op het vuur of in de microgolfoven (20 seconden op 750 watt is wel goed). Giet de melk in een grote kom.
  2. Verkruimel de gist in de kom en kluts het mengsel met een vork tot de gist opgelost is in de lauwe melk.
  3. Roer daar 40 gram van de boter bij (de rest heb je straks nodig voor het kaneelmengsel).
  4. Doe de helft van de suiker erbij en daarna ook de bloem en het zout.
  5. Kneed het deeg goed.
  6. Dek de kom af met een keukenhanddoek en zet ze op een warme plaats uit de tocht, zodat het deeg kan rijzen. Laat het minimaal een uur staan.
  7. Terwijl het deeg rijst, kan je alvast het kaneelmengsel maken. Neem de overige 25 gram boter en verwarm deze lichtjes (5 seconden in de microgolfoven). Doe daar de suiker bij die je nog over had en meng het goed. Doe dan het kaneel erbij. Laat dit ook een tijdje staan zodat de suiker kan oplossen in de boter.
  8. Kijk na een uur hoe het met het deeg gesteld is. Als het deeg verdubbeld is in omvang, kan je verdergaan met het recept.

Directions:

  1. Heath the milk until it’s tepid: either on the stove or in the microwave (something like 20 seconds on 750 watt). Make sure it’s not too hot. Then put the milk in a mixing bowl.
  2. Crumble the yeast in the bowl and mix it until it’s dissolved in the milk.
  3. Add 40 g of the butter (save the rest for later).
  4. Add half of the sugar (save the rest for later), all the flour and the salt.
  5. Knead it until it’s a smooth, elastic dough.
  6. Put it back in the bowl and cover it with a kitchen towel. Put in in a rather warm place out of the draught. Let it rise for at least an hour.
  7. While the dough is rising, you can make the cinnamon mix. Take the remaining butter and heat it a little (5 seconds in the microwave). Add the remaining sugar and mix it well. Add the cinnamon. Let it sit for a while so that the sugar can dissolve in the butter.
  8. After about an hour, check the dough. When it’s doubled in size, you can proceed to the next step.

Deel twee:

  1. Leg het deeg op het aanrecht en kneed het tot het soepel wordt.
  2. Rol het uit met een deegrol, en snij daarna de randjes eraf zodat het een lange rechthoek wordt.

Part two:

  1. Put the dough on the counter and knead it until it’s elastic.
  2. Roll it out with a rolling pin, and then cut of the edges so that it becomes a long rectangle.

Deel drie:

  1. Smeer het kaneelmengsel gelijkmatig uit op het deeg.
  2. Rol de rechthoek op, parallel met de korte kant en snij dan de rol in schijfjes van ongeveer 1,5 à 2 centimeter.

Part three:

  1. Spread the cinnamon mix evenly on the dough.
  2. Roll up the rectangle, parallel with the short side of the rectangle and cut it in slices from about 1,5 to 2 centimeter (about three quarters of an inch).

Deel vier:

  1. Leg de schijfjes op een bakplaat met bakpapier. Laat deze nu, afgedekt met een keukenhanddoek, nog een uurtje rijzen.
  2. Kluts het ei en smeer dat mengsel over de bovenkant van de kanelbullar. Versier ze met wat parelsuiker.
  3. Nu is het tijd om te gaan bakken. Laat ze 15 à 20 minuten bakken op 180°C. Als je wil testen of ze klaar zijn, prik er dan eens in met een vork. Het is de bedoeling dat ze niet meer nat of kleverig zijn, maar ook niet te hard, want bij het afkoelen worden ze nog wat harder.
  4. Klaar! :) Nu is het tijd voor fika met een lekkere kaneelkoek en een kopje koffie (of thee).

Part four:

  1. Put the slices on a baking tray with baking paper, cover them with a kitchen towel and let them rise for another hour.
  2. Beat up the egg and spread a little bit of it on each bun. As a finishing touch, add some pearl sugar.
  3. Time to bake! Put the buns in the oven and let them bake for about 15 to 20 minutes on a regular heath (I have no idea how ovens work in other countries). If you’re not sure they’re done, just prick them with a fork to feel. They’re not supposed to be wet or sticky, but not to firm either, because the get a little more firm when cooling off.
  4. Done! :) Now it’s time for a fika with a nice homemade cinnamon bun and a cup of coffee (or tea).

Tips:

  • Het duurt wel eventjes om ze te maken, dus je kan er best op tijd aan beginnen.
  • Het is heel belangrijk om je deeg goed te laten rijzen. Ik heb er hier tijden bijgezet om een beetje een idee te geven, maar als je deeg na een uur nog niet genoeg gerezen is, kan je beter nog een uurtje wachten.
  • Je kan het gistdeeg ook in een broodmachine maken, zo weet je zeker dat het goed is.

Tips:

  • It takes some time to make them, so you better start in time.
  • It’s very important to let the dough rise properly. If your dough is not ready after an hour, it’s best to let it rise for another hour.
  • It’s also possible to make the yeast dough in a bread machine. That way, you can be sure it’s good.
